The story of the roastery
Tao Coffee Roastery is a roastery of fine coffee that combines a Scandinavian approach to roasting with a philosophy of authenticity and intuition. It is inspired by purity of taste, precision and respect for the origin of each bean. The aim is to bring to Prague coffees that are roasted to reflect their terroir and natural characteristics, without unnecessary intervention in fermentation. Each batch is processed with the utmost care - analysed, measured, but the main measure of quality remains the sensory experience.
Founder & team
Behind Tao Coffee is Jan Paleník, who found his way to coffee in Scandinavia - a place where a minimalist approach to roasting allows the natural flavours of each bean to be brought out. It is here that his philosophy was formed, combining precise science with intuition and authenticity. Tao Coffee believes that great coffee doesn't start in the roastery, but on the farm, which is why they work closely with farmers, importers and baristas. The entire team shares a common vision - to roast coffee that is transparent, carefully selected and perfectly balanced.
Why Tao?
The roastery's name comes from Taoism, an ancient Chinese teaching where "Tao" means The Way. Tao cannot be precisely defined, but it can be experienced - it is a natural principle that guides us beyond rational thought. Jan Palenik sees the Tao as a path of intuition and authenticity. In his work he has a specific way of choosing and roasting coffee - he is not guided by trends or expectations, but seeks authenticity and balance, even at the cost of not appealing to everyone. In each packet of coffee, you will find a card with the story of a particular lot to help you better understand its origins and deepen your taste experience. In this way, Tao Coffee strives to connect coffee not only to taste, but also to understanding its journey.
