Well where to start... El Salvador processed Semi-washed (kombucha experiment). Semi-washed is a combined washed and natural process. If I hadn't read the coffee packaging, I would have said it was good natural coffee. So I rate it as an interesting surprise. The taste of the coffee is pleasant, sweet with pleasant acidity and a mild fermentation aftertaste. People who are not looking for the lightest roast will definitely enjoy it. I think that the roaster was trying to deal with grains processed by an experimental process with a slightly higher development. But I don't think that's a bad thing, it really suits the taste of this coffee. The flavor profile is fruity and playful, in my recipe I found mainly prominent cherries and red fruits, maybe grapes when the coffee has cooled slightly. The combination of a slightly alcoholic fermentation flavor with grapes can be associated with the taste of Pinot Noir to some people. But that is probably a very specific situation. I will try some ...Moremore recipes and see where I get with the taste. This coffee is definitely aimed at more demanding coffee lovers who like to discover new tastes.
