High potential for good coffee.
I confirmed again that Manhattan is "hit or miss".
The coffee is very unevenly roasted.
Recipe
Half of the grains are over-roasted, about a third are very light (practically beige). Above 85 degrees doesn't do her any good in this state, and it's difficult to get anything at least average out of her. I couldn't do it either with the V60 or from the aeropress.

I'm still going to try the cold brew; that might work, but buying such expensive coffee for a mediocre cold brew just isn't worth it.
