The best Ken's this year and I've had quite a few of them lately.
Complex, as it cools, the taste tones change

Water (g): 500
Water temperature: 99
Grinder (setting): Fellow Ode Gen 2 (6)
Process: Bloom 100g, swirl, after 45 seconds pour into 250g, from the drain, pour into 375 and after draining the rest. Time approx. 3:45-4:00.

Nice clean coffee
A little tea, fruity acidity and sweetness
Bit of a nasty finish (kind of herbal, bitter)… but maybe I need to play with the recipe more

Grinder (settings): timemore c2 (25 clicks on Hario filters, 24 on cafec medium dark)
Process: 1:30 bloom (60g water, swirl) > until 2:20 pour the rest of the water, mixed with a spoon > total time around 3:30

Grinder (settings): timemore c2 (15 clicks)
Process: all water at once, mix lightly and apply plunger > in two minutes swirl > 2:15 - 3:00 pressing
