Cascara means husk, in this case the husks of coffee cherries. These husks are a by-product of coffee processing. After the coffee beans are removed, which are then further processed on the farm, the husks remain, which are sweet, juicy, and full of fruity flavors. Farmers dry these husks and then sell them as Cascara. So it's not coffee.
Costa Rica Spring Cascara, prepared for you by The Naughty Dog roastery, is a fragrant return to blossoming spring in a cup. The base is made up of coffee cherry skins, or cascara, which naturally offer a slightly sweet, fruity character with a pleasant, delicate acidity. In this spring-inspired blend, they are complemented by pieces of apple and candied guava, which add juiciness and roundness to the infusion. Strawberries underscore the fruity notes, while lemongrass brings a fresh touch and a soft sweetness that will caress your palate. The whole profile is elegantly intertwined with floral notes of rose, cornflower, and sunflower, which add lightness and playfulness to the blend.
The result is a drink with a pleasantly sweet, fruity-floral aroma and a balanced flavor that is distinctive yet delicate. To prepare, we recommend using 15 g of the mixture, pouring 200 g of water at a temperature of 98 °C and steeping for 10 minutes. Then just strain, smell and enjoy a cup full of delicacy and playful flavors. Store in a dry place to keep the blend fresh and full of aroma for as long as possible. Cascara is simply a true gourmet experience and may well become an integral part of your daily rituals.
