Spring Edition Colombia Blend is a coffee from the Czech roastery The Naughty Dog, which has a fresh, light, and elegant taste. The first sip is reminiscent of a spring morning—the flavor has floral notes of elderflower and jasmine, which are delicate and airy. Added to this is a playful sweetness reminiscent of PEZ candies,a slight hint of white wine, and finally a caramel note that beautifully rounds off the whole profile. The acidity is medium, pleasant, and juicy, without any sharp edges. The coffee is sweet, clean, and very drinkable, with a light body and a long, harmonious aftertaste. Thanks to the omni roast, it works great both on a filter and as a finely prepared espresso, where it retains its floral delicacy and sweetness.

The blend combines twoColombian coffees that share modern processing and an emphasis on precise fermentation. The first component is Colombia El Diviso Peñas Blancas, the second is Colombia El Paraiso PO2. Both coffees come from Colombia and are processed using a washed anaerobic method, which brings out their purity, aroma, and elegant fruity-floral character. The combination of these two lots creates a balanced whole, where floral lightness naturally meets delicate sweetness and structured acidity. The result is a blend that is neither heavy nor overpowering, but rather very smooth and spring-like.

Processing plays a key role. Both components of the blend undergo anaerobic fermentation in a washed process, i.e., fermentation without oxygen, followed by washing. This process allows for precise control of the fermentation process and highlights the aromatic components without losing purity. As a result, the coffee retains its delicacy, floral character, and sweetness, but does not taste heavy or alcoholic. Anaerobic washed processing works here as a tool to enhance elegance and freshness, not as an additional flavor effect. Spring Edition is therefore the ideal choice for those who like modern Colombian coffees but are looking for a lighter, more floral, and very clean cup.
