Mahembe is not just coffee; it’s a story of dedication and love for farming. Justin returned home after the genocide in 1994 and decided to rebuild his family’s coffee farm to bring stability and economic opportunities to the region. Today, he takes care of not only 11,000 of his own coffee trees, but also local farmers who bring their cherries to be processed. In return, they are rewarded not only with fair purchasing prices but also health insurance, school fees for their children, and even livestock. Thanks to his precise work, 75% of his production is classified in the premium A1 grade, and Mahembe regularly scores in the prestigious Cup of Excellence competition.
And now, the best part – processing! Each cherry is carefully selected and sorted in floating containers, where the under-ripe ones are removed. This is followed by washing processing, where the cherries are de-pulped and fermented for 10–12 hours in water tanks. Afterward, the beans are thoroughly washed with mountain spring water and dried for up to 21 days on raised African beds. The result? Coffee that exudes purity, smoothness, and a delicate structure.
