Ethiopia is considered the cradle of coffee and its varieties are characterised by a huge diversity of flavours. Coffees from Ethiopia, especially those from regions such as Sidamo, Yirgacheffe or Guji, have a floral aroma, stronger acidity and notes of citrus, bergamot or jasmine. Naturally processed Ethiopian coffees often deliver wild, fruity notes reminiscent of blueberries, tropical fruits or passion fruit. The second member of this blend is beans from Colombia. This country is known for its rich coffee tradition and ideal conditions for growing Arabica. High altitudes, volcanic soil and a stable climate contribute to a balanced flavour profile with subtle acidity and sweet notes. Notes of chocolate, caramel, nuts and yellow fruits are often present. Thanks to the emphasis on washed processing, Colombian coffees have a clean and sophisticated taste.

The beans are first placed in closed containers where they ferment in a controlled environment with minimal oxygen. After fermentation, the beans are thoroughly washed and dried, allowing the coffee to retain the purity and bright acidity typical of washed processing, but also giving it a more intense and layered flavour profile.
