In Peru, the focus in the past was more on volume than quality, but today the situation is changing, and the Jaén region is proof of that. Farmers here grow coffee at an altitude of 1750–1950 m a.s.l., with volcanic soils and a tropical climate, which creates ideal conditions for growing truly delicious Arabica beans. The beans for Peru PACO come to the warehouse in Jaén from local farmers, where they undergo strict quality control – any defects are rejected! A tasting team evaluates and scores them, and based on the cupping score, fair prices are offered to the producers. This system motivates farmers to focus on quality, allowing us to enjoy top-notch Peruvian coffee.
The cherry on top (or should we say the coffee in your cup?) is the dry (natural) processing, which highlights its natural sweetness. Ripe cherries are dried on raised beds for up to 30 days, concentrating the sweetness and fruity notes.
