This piece of Peruvian soil for your lever comes from the Cajamarca region, specifically from the farm of Mario Jesús Rufasta, who has been making this coffee for over 30 years. The farm is situated at an ideal altitude of 2,000 metres, which creates the perfect microclimate for growing coffee trees and contributes to the distinctive acidity and rich flavour of this coffee.
The washed method of coffeeprocessing is one of the most common and popular ways to preserve the purity and sophistication of the flavour profile. This process begins with the coffee cherries being stripped of their skins and some of their pulp after being hand-picked using a depulper. The beans are then fermented in water tanks for 12-48 hours, during which time enzymes break down the remaining pulp. After fermentation, the grains are thoroughly rinsed and dried on raised beds or concrete surfaces. The result is a coffee with clean, bright flavours, high acidity and balanced complexity that stands out in every cup. This method is time and water intensive, but yields coffee that has a smooth texture and a high-quality flavor profile.
