This coffee comes from the Hartmann Family Farm, located in the Santa Clara area of Panama's Renacimiento Chiriquí region . The farm has a fascinating history, with roots dating back to 1891 when it was founded by Alois Strasil Hartmann, originally from Moravia. The grandfather of the current owner, Ratibor Hartmann, decided to invest in coffee cultivation, which led to the development of the Finca Hartmann farm, which today produces some of the best coffee in Panama. Ratibor and his family have been instrumental in improving the quality and sustainability of the farm, where they emphasize growing coffee trees in the shade and ensuring organic farming without the use of pesticides. Local natives are involved in the processing, which strengthens the local economy and gives the farm a unique character.

The processing of this coffee is as meticulous as the entire growing process. After the cherries are hand-picked at their ripest stage, they are dried on raised African beds, where careful checks are made to ensure that no water gets on the cherries between harvesting and drying, which could damage the transfer of sugars to the beans. After a few days of drying in the sun, the cherries are transferred to mechanical dryers to ensure even drying. Five siblings work on the farm, constantly providing quality feedback and experimenting with new processing techniques, including anaerobic processing, making the Hartmann Family a leader in innovation in specialty coffee.4o mini
