The coffee is of the Parainema variety, a hybrid developed for disease resistance without compromising its excellent flavor quality. It is processed using the natural method, where the whole coffee cherry is dried in the sun on African beds after harvesting. This method allows the coffee to absorb the maximum amount of sugars from the pulp, resulting in its pronounced sweetness and delicate fruitiness.
