About Kafferäven Per Nordby
The Swedish roastery Kafferäven Per Nordby is a fox representative from the city of Gothenburg. And what does the name of this roastery actually mean? Kafferäven (Vulpes Coffeum) is a species among foxes, which is characterized by an extremely sensitive nose, perfect style and great social skills. Every year, Kafferäven travels to the tropics on collection expeditions and returns carefully selected catches to its northern lair.
The roastery was founded in 2013 and today is run by an enthusiastic trio of Per, Susanna and Elin. They get green coffee directly from farmers, producers and exporters, whom they already call as their friends. For years, they have traveled around the world, and especially in areas where coffee is grown to understand what is behind the effort to grow the best and highest quality coffee and how hard work is behind it. Through these trips, they have established friendships with fantastic coffee producers who share their passion, values and goals. This continues to help them ensure that the coffee they buy comes from socially and environmentally sustainable businesses and is of the best quality.
They take coffee from their network of selected farmers and buy it as "dried seed". We call it green coffee. All the flavors of coffee are hidden in this seed, but these flavors do not show up until the green coffee is roasted. And it is thanks to roasting that the aroma of the coffee itself develops. Their goal is to roast green coffee in a way that provides a balanced cup of coffee. At the same time, they want to highlight the flavors that lurk inside green coffee and give them space in your cup. Each coffee is different and must use a different roasting profile. That's why coffee is roasted by hand to make sure nothing is left to chance.
