Within just a few hours after harvesting, the cherries are delivered to the processing station by around 160 so-called "runners." At the station, the cherries are depulped and then undergo a special fermentation method that includes an initial wash, a long soak in cold mountain spring water, and a gentle, extended fermentation lasting forty hours before the final wash. Finally, the beans are carefully sorted.
The SL14 variety is common especially in Uganda and Kenya. It’s drought- and cold-tolerant, has light brown leaves, a tall structure, and is highly productive. Unfortunately, it is susceptible to disease and pests. SL28 is grown not only in Uganda and Kenya but also in Malawi and Zimbabwe. It too tolerates drought and is beloved for its excellent cup quality—though, like its “sister,” it is disease-prone. The Nyasaland variety is known for high quality and good flavor potential, with light brown leaves and tall growth. It is especially popular among small farmers in Uganda.
