Coffee enthusiasts from Brno who combine excellent coffee with cool, memorable graphics – that’s Industra Coffee. This time, they’ve roasted a fresh harvest from Mexico into a pleasantly sweet, harmonious filter. In the cup, expect a full body with flavors of plum, panela, and almonds in chocolate.
The state of Guerrero is one of 16 coffee-producing regions in Mexico. With 80% of its territory covered by mountains, agriculture is the main economic activity. The region is known for its naturally processed, shade-grown coffee – a rarity in Mexico, where over 90% of all coffee is processed using the washed method.
This coffee is the result of the hard work of a group of 20 women who have spent their lives facing daily discrimination in an environment where women are heavily marginalized. In this extremely poor region, human trafficking is a major issue, and exchanging daughters for livestock or money is still a common practice in some communities. Women in Guerrero are not allowed to own land, even though they often do all the work themselves, as men frequently emigrate north to cities in search of better-paying, more prestigious jobs. The Ensambles team ensures that the earnings from this coffee go directly to the women producers – not their husbands, fathers, sons, or cousins.
The natural processing method, also known as dry processing, is one of the oldest ways to process coffee after harvesting. It’s commonly used in water-scarce areas, especially in Africa and the drier regions of Latin America. In this method, coffee beans are dried inside the whole cherry, which means the fruit is left in the sun, regularly turned, and covered when the weather is bad. When done correctly, it results in uniquely complex flavors in the coffee. And because there's no contact with water, this process significantly reduces the risk of developing fermented or off flavors.
