It is grown at an altitude of 1,350–1,500 m.a.s.l. on the El Estribo farm, where Samuel Altamirano Juárez ensures its outstanding quality. The Altamirano family has owned the farm since 1850, and since 2012, they’ve been fully focused on specialty coffee production. Varieties like Bourbon and Costa Rica 95 are cultivated across ten hectares, with an annual output of approximately 150 bags of parchment coffee. The day-to-day operations are managed by a team of seven, which expands to up to 20 workers during harvest to ensure the careful handpicking of only the best cherries. El Estribo’s commitment to quality and community not only results in exceptional coffee but also actively supports its employees and the local community. Despite challenges like extreme weather and labor shortages, Samuel Altamirano Juárez continues to innovate and invest in the farm’s future to offer even better coffee.
After harvest, the coffee cherries are rested for 12 hours, fermented for 20 hours, and then go through a gentle drying process. This method ensures a clean and sweet flavor that shines through in every brew. The farm prioritizes eco-friendly farming, using organic fertilizers and regularly pruning coffee plants to ensure optimal growth.
