It is grown at an altitude of 1,350 – 1,500 m.a.s.l. on the El Estribo farm, where Samuel Altamirano Juárez ensures its quality. The Altamirano family has owned the farm since 1850, and since 2012 they’ve focused entirely on specialty production. Varieties Bourbon and Costa Rica 95 are cultivated on ten hectares, producing around 150 bags of parchment coffee per year. The daily operations are managed by a seven-member team, which expands to up to 20 workers during harvest season to ensure the careful handpicking of the best cherries. The farm’s commitment to quality and community not only results in exceptional coffee but also supports its employees and the local community. Despite challenges such as extreme weather and labor shortages, Samuel Altamirano Juárez continues to innovate and invest in the future of the farm to offer even better coffees.
After harvesting, the coffee cherries are rested for 12 hours, then fermented for 20 hours, followed by gentle drying. This process ensures a clean and sweet flavor that shines through in every brew. The farm practices ecological farming, uses organic fertilizers, and regularly prunes coffee trees to support optimal growth.
