The roastery Sheep&Raven brings a unique coffee EL PLACER Wush Wush Black Honey, which impresses with its intense fruitiness and balanced acidity. The flavour is dominated by cherry, hibiscus and orange, complemented by rich notes of cocoa nibs that add depth and subtle sweetness. Originally from Ethiopia , Wush Wush has found a firm place in Colombia, where it stands out for its floral aroma and tropical fruitiness. Thanks to precise black honey processing and carefully controlled fermentation, the coffee acquires a velvety texture and full body. This lot is ideal for drip brewing methods where its complex flavour profile is fully developed.
The coffee is grown by El Placer Farm , run by Sebastian Ramirez, a fourth generation Colombian coffee producer. Sebastian specializes in experimental processing and precise fermentation methods that result in extraordinary consistency and exceptional quality. In addition to Wush Wush, he also grows Sidra, Gesha, Pink Bourbon, SL-28 and Laurina in the Quindío and Huila regions. His farm takes an innovative approach, using proprietary cultures of yeast and lactic acid bacteria to create a rich flavor profile, balanced acidity and full body during fermentation. Thanks to these practices, El Placer Farm's coffee is highly regarded not only among specialty coffee lovers, but also in barista competitions around the world.
Black Honey processing is one of the most laborious processing methods, leaving as much sweet pulp on the beans as possible after the skin is removed . The cherries are then dried in the shade on African beds, stirring regularly to prevent unwanted fermentation. This process can take up to 30 days, giving the coffee a deeper sweetness, thicker body and intense fruit notes. The result is a cup with a rich sweetness, distinct notes of dried fruit and a velvety aftertaste that lovers of unusual flavours will love. This precise process ensures an intense fruity sweetness, a velvety texture and a complex flavour profile that is utterly unmistakable.
