It develops in taste. When it's hot, floral notes predominate. When it is cold, the taste begins to be dominated by notes of woodpecker, and as it is cold, it turns into citrus acidity, which can be unpleasant for some. After all, the roaster itself points out on its website that tastes change with respect to the temperature of the coffee.
Maybe more sour for some. But this refers to the conclusion when the coffee is colder.
