The Kiamacora coffee comes from the Kiambu region in Kenya, one of the most renowned coffee-growing areas in the world. This coffee is cultivated on the farm of Daniel Kimani Ngumi, who specializes in producing high-quality coffee with a focus on sustainable agriculture and eco-friendly methods. The farm grows two varieties, SL28 and Ruiru 11, known for their excellent flavor quality and disease resistance. These beans are grown at an altitude of approximately 1750 meters above sea level, in rich red volcanic soils that give the coffee its characteristic complexity and depth of flavor.
The washed method of coffee processing, also known as washed, is one of the most common and cleanest methods of processing coffee cherries. After harvesting, the cherries are first depulped using a special machine, then the coffee beans are fermented in tanks to remove the mucilage surrounding the beans. After fermentation, the beans are thoroughly rinsed with clean water to ensure the removal of any remaining mucilage, leaving them clean. This process significantly influences the flavor of the coffee, which tends to be fresher, smoother, and with a more pronounced acidity. The washed method is popular for coffees with delicate, cleaner flavor profiles and is often used for coffee from high-altitude regions, where ideal conditions allow for precise processing.
