The coffee is sourced from Karana Community, a collective of 377 smallholder farmers in the Kintamani region . At an altitude of 1,200 metres, they grow S795 and Kartika varieties on over 470 hectares, in the spirit of traditional Balinese culture and community farming. Their approach to coffee is deeply rooted in local values - connection to nature, respect for the land and a focus on sustainability. In addition to coffee, they also grow oranges and vegetables, contributing to biodiversity and healthy soil.
What makes this coffee really special is the way it is processed. Carbonic maceration - the fermentation of whole cherries in a carbon dioxide -rich environment - is a modern method known from the wine industry that develops smooth and elegant fruit notes in the coffee. After fermentation, the cherries are dried whole on raised beds, allowing for even drying and maintaining purity of flavour.
