This coffee originates from a small family farm, El Triunfo, owned by Yolanda Urrea Arita and her husband Luis, located in the Las Pacayas area of Corquin, Copan. The two-hectare farm is planted not only with Red Catuai coffee trees but also with various fruit and native trees, providing shade and promoting biodiversity. Yolanda and Luis believe that the quality of their coffee is directly linked to the health and diversity of their surrounding ecosystem. Hence, the farm practices biodynamic agriculture, although it is not yet certified. Together with their three sons, who study agronomy, they strive to create a harmonious and sustainable environment that attracts wildlife and enhances the quality of each coffee bean.
The processing takes place at the Aruco station, situated at an altitude of 800 meters, where drier climatic conditions ensure more stable drying. Coffee cherries brought to the station by small farmers are carefully sorted. For microlots like Yolanda Arita, the natural method is employed. Cherries are first washed and then dried on raised beds for 25 days, during which they are regularly turned to achieve even drying and to intensify sweet, fruity notes in the final taste.
