Marysabel Caballero and Moises Herrera are one of the most famous duos in the world of Honduran fine coffee. Marysabel grew up in the Marcala region in a family with a long coffee tradition, surrounded by nature and a deep respect for the local terroir. Originally from Guatemala, Moises moved to Honduras as an accountant and as fate would have it, their paths intertwined - not only in life, but also professionally. Together, they began building their own coffee empire, which today numbers more than a dozen farms in the Xinaclá region. Their flagship farm , El Puente, is a symbol of quality and perseverance, having won numerous awards in its more than 25 years of existence, including winning the prestigious Cup of Excellence competition.
The cherry harvest on the Marysabel and Moisese farms is carried out entirely by hand and with the utmost attention to quality. The local pickers are fairly rewarded for carefully separating the ripe cherries from the unripe ones, which go into separate bags, during the picking process itself. The picking is followed by slow and gentle drying on raised beds near their house in Marcala, where the dry climate is ideal for controlled drying. The cherries are turned regularly during the day to dry evenly and covered at night to prevent dampness and unwanted condensation. Once they have reached optimum moisture, the coffee is safely stored in airtight GrainPro bags to protect the flavour and quality of the resulting beans.
