Today, the farm is managed by the third generation, who, despite challenges like climate change and a shortage of labor, continue to produce coffee of the highest quality. How is this coffee processed? The washed method highlights its clean and sweet flavor profile. Carefully hand-picked cherries are first pre-fermented for 24 hours, then the skin is removed, and they are fermented for an additional 15 to 24 hours.
