The Syoum Family is a family-owned business that focuses on sustainability and ethical growing, which includes supporting workers with living wages, housing, food and education for their families. This approach not only ensures quality coffee, but also contributes to the prosperity of the entire community. The harvest takes place between November 2023 and January 2024 and the coffee grows at altitudes of 1 ,998 to 2,200 metres above sea level, giving it not only a rich flavour but also a subtle acidity and complex profile.
This coffee is processed using the dry (natural) method, which ensures that the coffee retains its rich character and sweetness. After harvesting, the cherries are dried on raised beds for 3.5 weeks, allowing the natural fermentation process to bring out the complex fruity and floral notes to the maximum. This process also ensures that the coffee has a smooth but distinct texture with a praline sweetness. We recommend brewing your coffee using the V60 method with a 1:16 coffee to water ratio, ensuring a balanced cup that perfectly showcases all of its nuances.
