Ethiopia Shoondhisa is an exceptional naturally processed coffee produced by Sookoo Coffee, a company founded in 2018 by Ture Waji, famously known as the "King of Guji," and his brother, Assefa. This coffee comes from the Odo Shakisso area in the Oromia region, specifically the Guji zone. Coffee cherries for this lot are carefully harvested from Shoondhisa Kebele village and surrounding communities. Most cherries delivered to the Sookoo station come from varieties Gibirinna 74110 and Serto 74112, originally selected from the Metu Bishari forest in the Illubabur zone. Through their company, Sookoo Coffee, Ture Waji and his brother Assefa not only enhance coffee quality in the region but also support local farmers, promoting sustainable development and economic growth.
The natural coffee processing method involves drying freshly harvested coffee cherries in the sun without removing their pulp and skin. The cherries are spread on raised drying beds or concrete patios and regularly turned to prevent molding. This process takes several weeks, and the resulting coffee often exhibits a distinctive, sweet, fruity flavor profile due to extended contact between the beans, pulp, and skin.
