The coffee is sourced directly from farmer Mate Matiwos, who specialises in specialty coffee and precise processing. Mate originally started out as a trader, but later decided to lease land in the Keramo and Danche areas, where he began to devote himself full time to growing coffee. As well as running his own farm, Mate is also a devoted father of six children - his eldest son is studying at university, his second son helps on the farm and his youngest son is a teacher. He is also actively involved in community life in his neighbourhood, where he serves as a preacher and local leader. His coffee reflects this combination of family values, community spirit, and passion for quality, as evidenced by the unique anaerobic fermentation of the beans for 72 hours in sealed vessels.
Anaerobic-natural processing in this case means that the ripe coffee cherries, once picked, are transferred to airtight containers where they are left to ferment for several hours, speeding up the entire fermentation process. During this process, the natural sugars from the surface of the cherries help to give the beans inside depth and a distinctive fruitiness. After fermentation, the whole cherries are dried on raised African beds until they reach the desired moisture content.
