This coffee comes from the Sidama region of Ethiopia, specifically from the Keramo area in Bensa. The Mate Matiwos farm is located at a high altitude, allowing the coffee cherries to ripen slowly and develop a deep flavor profile. The Sidama region is renowned for its fruity and complex coffees, which are highly praised worldwide.
The coffee underwent anaerobic natural processing, which enhances its sweetness and structure. After hand-picking, the cherries were fermented without exposure to oxygen for several days, which highlighted their fruity and wine-like notes. They were then dried in their whole form (natural processing method) on raised beds, where their even fermentation and drying were carefully controlled.
