The coffee comes from the Uraga Woreda area in Ethiopia, known for its exceptional conditions for growing fine coffee. It grows at an altitude of 2100–2250 meters on rich red soils that naturally support the development of a complex flavor profile. The processing is managed by the Siko station, led by Alemayehu Sali. He works with more than 500 local farmers who focus on hand-picking and carefully sorting the cherries to ensure that each bean meets the highest quality standards. This coffee bears the name "Magarissa" – a word meaning green in the Oromiffa language, symbolizing both the vitality of the local nature and its authentic origin.
This coffee is processed using the washed method. After mechanically removing the skin and part of the pulp, the beans are fermented for 36–48 hours in water tanks. This step is crucial for achieving clean flavors. After fermentation, the coffee is still washed for another four hours, which helps harmonize the flavors and enhance its freshness. The drying process takes place on African beds, where the beans slowly lose moisture over several days, gaining their characteristic smoothness, clarity, and delicate complexity, which you will recognize in every sip.
