This lot comes from the Huke washing station, run by family-run Testi Coffee. The station is located in the village of Banko Gotiti in the Gedeb area (Sidamo region) and is situated at an altitude of 2 100 m above sea level. The coffee produced here is the result of a collaboration with ten farmers - each of whom grows coffee trees in their own fields and hand-picks the cherries, which are then carefully brought to the station. Everything is supervised, from harvesting to processing to drying, so you have total traceability and quality assurance.
This coffee is processed using a washed method, and it's been fine-tuned down to the last detail. First, the cherries go through a water bath where unripe or damaged pieces are sorted out. This is followed by a 48-hour fermentation, with the water being changed every 24 hours to ensure the fermentation is even. Drying takes place for 21 days on raised African beds - the coffee is turned regularly to bring it to the ideal moisture level. The result is a clean, elegant cup that reflects not only the skill of the farmers, but also the honest approach of the entire Huke station.
