The coffee is sourced from the Gedeb region , located in the Gedeo zone in the southern part of Ethiopia, in the Yirgacheffe region . This region is known for its rich coffee culture and the production of the highest quality beans. The Gedeb Slow Dry processing plant, where this coffee is processed, is carefully selected for its high standards. Here, the best coffee cherries are purchased from local farmers and then brought to the Worka washing station . The altitude of 2150-2200 metres above sea level and the unique local conditions give this coffee a distinctive and unmistakable character.
This coffee is processed using the slow dry natural method , which is very demanding in terms of care and time. After harvesting, the cherries are placed on raised beds under a special greenhouse-like cover where they are dried for up to 20-25 days. This slows down the drying process and prolongs the fermentation that takes place inside the cherry. The result is a fruitier flavour profile that is richer and more complex than that of conventionally dried coffees. This demanding process requires careful attention and plenty of space, as the coffee must be spread out in a thin layer to ensure even drying. The resulting coffee is then ready for export to be enjoyed by specialty coffee lovers around the world.
