In the very heart of Europe, in Prague, Jackie and Thu strive to meticulously capture and develop the fruity palette of coffee, ensuring that every sip embodies the origin and character of the variety. Mazelab is a flavor laboratory, a playground of creativity where nothing is impossible. This is where carefully cultivated, harvested, and selected coffee beans journey to, and it is here that something extraordinary is created from an unassuming green bean.

Jackie spent most of his life working as a successful designer (a fact that is hard to miss in one of his stylish cafés). With a well-established career in San Francisco and the soul of a dreamer, he ventured to Iceland to explore (and photograph) nature. It was there that he first got the idea to open a café with a photo gallery. Not long after, he opened his first café in Prague with the belief that the foundation of good coffee is quality latte art. However, Jackie soon realized that coffee is much more than that and opened Mazelab, a space that celebrates all aspects of coffee.

Over the years, Jackie discovered that simply serving great coffee wasn’t enough for him — he wanted to be part of the story of the green bean. Thus, in May 2023, he embarked on the roastery project. Jackie sees himself as a coffee hunter. He loves discovering hidden gems that offer extraordinary flavor experiences. Each unique taste is like finding a hidden treasure in the diverse world of coffee. Jackie and Thu want to share this adventure and bring their treasures to customers in the form of a delicious cup of coffee.

If you haven’t heard of Mazelab yet, you might know some of Jackie’s other projects. Each one is entirely unique and offers a distinctive experience. However, all of them are united by a passion for coffee and the ambition to create a space where the fatigue and rush of everyday life have no place. For example, Cafefin — the first Vietnamese café in Prague, Format Coffee, or Ăn Bistro Cafe — a unique concept where specialty coffee meets Pho.
