This coffee comes from the Ethiopian region of Guji, specifically from the village of Bookkisa, located at an altitude of about 2000 meters. Ture Waji, an acclaimed producer and manager of the Sookoo Coffee station, is the driving force behind this coffee. He works with 33 small-scale farmers who each manage only a few hectares of land. Ture provides the farmers with resources in processing, education, and infrastructure, enabling them to focus on cultivating and harvesting the best beans. Thanks to this approach, the coffee from Bookkisa maintains long-term high quality and the reputation of one of the gems of Ethiopian coffee.
The processing of this coffee follows the traditional natural method. After hand-picking, the ripe coffee cherries are spread out on African beds, where they dry in the sun for several weeks. During the drying process, the cherries are regularly turned to ensure even drying. This process allows the sweetness and fruity notes from the pulp to be absorbed into the beans.
