Buku is among the highest coffee-growing regions in Ethiopia, providing optimal conditions for stellar cup quality. The farms are scattered throughout the highlands, reaching elevations up to 2,350 m.a.s.l. Esayas Beriso began his career working at a government office in Dimtu. During this period, he and his brothers started a small business collecting coffee cherries from local farmers and selling them to nearby wet mills.
On his farm, Esayas Beriso and his team hand-pick ripe cherries. Only fully ripe cherries are selected for anaerobic fermentation. The cherries are tightly packed into a large, sealed plastic container and left to ferment anaerobically (without oxygen) for 18 to 24 hours. During this process, microbes consume all the oxygen in the container, allowing anaerobic microorganisms—which thrive in carbon dioxide-rich environments—to dominate fermentation. After fermentation, cherries are carefully removed from the plastic containers and dried on raised beds in direct sunlight for approximately 2 to 3 weeks. Workers frequently rotate the coffee to ensure even drying.
