The Lecho washing station processes the harvest from more than 400 small-scale farmers around Uraga. This area lies at an altitude of up to 1,945 metres above sea level and is one of the highest parts of Ethiopia. Coffee cultivation here has deep roots - fields of 1-2 hectares are often passed down from generation to generation. Most of the trees are relatively young and the 74110 and 74112 varieties ( part of the Ethiopian heirloom) are not only disease resistant but also have a highly aromatic profile. Thanks to its rich soil, ideal climate and varied terrain, the Guji region has become one of the most important specialty coffee-growing regions in Ethiopia in recent decades.
The processing of this coffee is truly exceptional - Ethiopia may not be known as the cradle of experimental methods, but Lecho Washing Station shows that innovative and finely structured coffees can be produced here too. After careful hand-picking and sorting, the cherries were dehusked, leaving the maximum amount of sugar on the parchment. They were then placed in sealed plastic barrels with no access to oxygen, where they fermented for 96 hours. Drying then took place traditionally on raised African beds for approximately 10 days. The result is an elegant and complex filter that is guaranteed to brighten your cup.
