The West Valley, where this wonder comes from, is the most important coffee-growing region in Costa Rica. Most of these coffees are grown in protective shade and on fertile soils, typical of Costa Rica. The mountainous landscape is dominated by three volcanoes and gentle wild tectonics, while the Pacific weather creates well-defined dry and rainy seasons, making it perfect for coffee cultivation.
Volcan Azul is located on the edge of the Poás volcano. For five generations, farmers have continued to grow coffee with the goal of achieving perfection and the highest quality. The descendants of the founding families are acquiring natural tropical rainforests with the aim of protecting and preserving the environment and reducing air pollution and global warming. This is their way of contributing to a better future for the coming generations.
The processing method for this lot begins when the cherries are still on the tree. Through constant Brix sugar level measurements, Alejo and his team try to identify the ideal moment for harvesting the coffee. The cherries are then sorted and moved to raised beds for slow drying. This classic natural method imparts the coffee with well-rounded flavors and a gentle sweetness that is simply irresistible!
