This coffee has been processed using the red honey method , which involves leaving the pulp (mucilage ) partially on the beans during the drying process. Unlike the conventional honey method, more pulp remains on the beans. During the drying process, the pulp remains on the beans, gradually releasing the sugars that give the coffee its deep sweetness and distinctive aromatic profile.
