This coffee is every coffee romantic's dream. The Costa Rica Sonora Geisha from Kaizen Coffee is a light roasted specialty coffee - perfect for methods like V60, Chemex or AeroPress. The flavour combines wild strawberry, subtly sweet nectarine and ethereal jasmine, which together create an elegant, floral-fruity profile with a long and velvety finish. This geisha definitely won't leave you cold - it's a cup for those special moments when you want to taste coffee on a whole other level.

Behind this exceptional coffee is Sonora Estate, a farm with over a century of tradition located in the Central Valley region of Costa Rica . Since the 1970s, it has been run by the Alberto Montero family , who have transformed the farm into one of the most exciting places on the specialty coffee map. After the crisis in 1999, they decided to invest in their own processing and started experimenting with alternative methods such as honey or natural. Today, Sonora grows over 20 different varieties, including the rare Geisha, which is famous for its complex, floral character. In addition, the farm is largely self-sufficient and energy independent - the electricity here comes from renewable sources thanks to its own hydroelectric plant.

The dry processing of this coffee is as precise as its taste. The cherries are hand-picked, followed by float separation and then pulping on a Penagos machine, which preserves all the mucilage - important for fermentation. The initial drying on the patio over 9 days is followed by a stabilisation phase in a dry warehouse and then mechanical drying at low temperature to a final moisture content of 10,5 %. The grains then rest in parchment for two months before being carefully sorted according to weight, size, density and colour. This meticulous approach results in a cup that is full of sparkling acidity, freshness and refinement. If you're looking for something special, Sonora Geisha is an experience to remember.
