This coffee is produced by Finca Monte Alto, one of the two farms of the family-run Café Directo, founded in 2013 by Gerardo and Jennifer Arias. Their goal was to create a farm that combines top quality coffee with sustainable farming and fair trade. The farm is located in the legendary Tarrazú region, where conditions are ideal for growing fine Arabica. Monte Alto translates as 'high mountain', which accurately describes its location at 2,000 metres above sea level - it is here that coffees with rich body, complex sweetness and distinctive fruity acidity are produced. The Arias boast more than 30 years of experience in microlot cultivation and experimental processing, making their production a true jewel of Costa Rica.
This naturally processed lot was hand-harvested and carefully selected to ensure that only perfectly ripe cherries made it into the final selection. Once harvested, they were dried for 30 days on African beds, which allowed them to dry evenly and helped develop their rich sweetness and fruit character. The coffee was then left to rest in a cool, dry environment for several days to allow the flavours to stabilise before peeling, sorting and packaging. This careful process ensures not only purity and consistency of flavours, but also the long shelf life of the resulting cup.
