Las Lajas Farm, located in Alajuela, Sabanilla, is at the heart of the organic approach to coffee growing. Oscar Chacón Solano and his family decided to differentiate their production and create a farm that respects nature and the local community. Thanks to the volcanic soil and the altitude of 1,500 to 1,700 metres above sea level, coffee trees grow here in the shade of other trees, which contribute to the richness of the soil. The farm uses organic compost made from coffee husks and waste material from local mills, ensuring sustainability and quality of the crop. Although they had to switch to subsistence processing methods in 2008 due to the earthquake, today they are one of the pioneers of this technique and export around 2,700 bags of coffee per year.
This coffee is processed using the honey method, which combines the sweetness of natural drying with the purity of washed coffee. The carefully hand-picked cherries are stripped of their skins but left with 100% of the flesh, which gradually caramelises during drying on African beds. This process gives the coffee a subtle fruity sweetness and velvety texture. After reaching optimum moisture, the coffee is stored for a minimum of 60 days to allow the flavours to stabilise and develop fully. The result is a unique flavour profile that combines tradition, innovation and, above all, the pure joy of coffee.
