About The naughty dog

The Naughty Dog roastery is based in the picturesque town of Jílové u Prahy, about 40 minutes from the capital. The name of the roastery is inspired by two naughty dachshunds, the speckled Jenny and the red-haired Mája, who accompany their owners everywhere. Their passion for coffee is reflected in the desire for a cheerful, playful, and original name. You'll find dog paw prints not only on their great coffee bean packages. The mischievous nature of their two dachshunds permeates the entire roastery, which has been with us since October 2018.

It’s no secret that Petra Veselá and Gwilym Davies met one coffee-scented day in Greece, where Petra was judging a competition. It was here that the spark flew, and today both are known not only for their achievements in the world of coffee but also as a loving couple. With their extensive coffee experience, they came up with the idea of opening their own roastery. And since Gwilym was well-traveled, it suited him to hide away a little in our Czech homeland. In Jílové u Prahy, they have their charming roastery and also a space where they hold coffee courses, contributing to the education of all coffee enthusiasts. Together with this always cheerful duo, coffee beans are also brought to you by Ondra Veselý, who oversees the roasting process. And because it’s always bustling in this roastery, you’ll also meet other members who help with order fulfillment or with latte art courses and cuppings. In the early days, they were even helped significantly by Scott Rao, who taught Gwilym how to roast.

The roastery focuses on careful selection of green coffee from farmers from various corners of the world, primarily from Ethiopia, Colombia, and Panama. Each coffee is roasted in a way that highlights its unique flavor characteristics. Petra is in charge of selecting and ordering green coffee, quality control of roasted coffee, and managing social media. Gwilym, with over 25 years of experience in the coffee world, focuses on the roasting itself, and his dream is to one day roast cocoa beans and make chocolate. In collaboration with Kofio, they’ve also presented several coffee advent calendars, and to this day, you can enjoy the much-loved barrel-aged coffee Jennys Barrel Coffee or seasonal limited editions.

This naughty and beloved roastery is known not only for its rebellious and playful approach to coffee but also for its achievements. Among them is definitely Gwilym’s defense of the title of World Champion in coffee preparation in 2009. Petra certainly doesn’t fall behind and is a multiple champion of the Czech Republic in coffee preparation and the author of the successful "Big Book of Coffee", of which over 29,000 copies have been sold.

Interesting coffee when prepared as an espresso. I did not manage to prepare the filter satisfactorily, the coffee was always bitter even when I used 85% water. A recipe from a roastery for the recommended preparation procedure would be useful
With V60, the taste is always bitter, slightly fruity, which could also be the method of preparation
