This unique coffee comes from the farm of Edwin Noreña, an innovator known for his experimental processing methods. His farm is located in the Quindío region of Colombia, at an altitude of 1750 meters above sea level, where he grows the prized Pink Bourbon variety. Edwin is a pioneer in the field of fermentation and constantly pushes the boundaries of traditional coffee processing, creating unique flavor profiles that win the hearts of coffee enthusiasts worldwide.
This coffee undergoes a complex processing method that starts with a two-hour soaking of the cherries in water, followed by a 72-hour carbonic maceration, during which the so-called musto – a fermenting juice – is collected. This juice is enriched with cultured yeasts, glucose, and amino acids, and is then re-infused into the coffee after it has been depulped, leaving 60% of the mucilage on the beans. The second fermentation takes place with dehydrated green apples and lasts another 72 hours. The coffee is then dried for 15 days on African beds and finally stabilized in protective bags to preserve its rich flavor profile. The result is a distinctly fruity, fresh, and juicy coffee with an unconventional character that is sure to surprise you.
