The La Victoria farm, nestled in Colombia’s mountainous landscape, is a place where coffee growing is a family legacy. Located in the Huila region — known for its perfect conditions for specialty coffee — the farm benefits from high altitudes, rich volcanic soil, and steady rainfall, all of which give the coffee its complex flavor profile. Every step of the production process is carefully managed, from handpicking ripe cherries to precise processing that preserves the floral and fruity notes. This coffee is processed using the washed method, one of the most common techniques for specialty coffee. After careful handpicking, the coffee cherries are depulped to remove the skin and most of the fruit. The beans, still coated in a sticky layer of mucilage, then undergo fermentation in water tanks for 12 to 48 hours. During this time, enzymes break down the remaining fruit. After fermentation, the beans are thoroughly washed with clean water to remove any residue. Finally, the coffee is dried in the sun on raised African beds or concrete patios.
