The coffee comes from Colombia, from a farm run by the couple Wilson Rodriguez and Edith Enciso, along with their son Eduardo. Both Wilson and Edith come from traditional coffee-growing families and now own three farms: Lusitania, La Isla, and Villa Sofia. The Enciso coffee is grown on the Villa Sofia farm, located in the Tolima region, known for its mountainous landscape resembling a fertile rainforest. The family cultivates Colombia and Caturra varieties at an altitude of 1,550 meters, contributing to the unique flavor profile of their production.
The beans are processed using the washed method. After the ripe coffee cherries are handpicked, they are mechanically depulped, then washed in water to remove the mucilage, and finally, the coffee beans are dried on raised beds, protected from rain and direct sunlight, to achieve the desired moisture level. This stable processing method takes up to 30 days and ensures a clean and delicately flavored final cup.
