Nestor Lasso, a farmer from the Huila region , specializes in rare varieties and experimental processing methods, making his coffees some of the most distinctive on the market. In addition, he popularises our Czech Plánička method on his farm, playing loud music during fermentation to supposedly put the beans in a better mood. Ombligon means 'navel' in Spanish - and this rare variety gets its name from the unusual shape of the beans, which resemble small navels. But apart from its pleasing appearance, it also captivates you with its unique flavour, which is fast becoming a secret favourite of connoisseurs.
This coffee has undergone a meticulous process of thermal shock processing combined with fermentation in oxygen-free vessels , which further emphasises its rich flavour and purity of profile notes. Fermentation was carried out in 2 stages, which helped to bring out its natural sweetness and intense fruit character. It was then dried slowly and in a controlled manner, achieving perfect stability and depth of flavour in each bean. This precise approach has ensured that the coffee not only tastes great, but also retains its vibrancy and freshness for longer.
