The El Diviso farm is located in the Huila region of Colombia , at an altitude of over 1,750 metres above sea level, and is run by a young producer, Nestor Lasso, together with his brother and father. While the family takes care of the day-to-day running of the farm, Nestor devotes himself full time to the cupping lab. A place where new flavour profiles and experiments with fermentation are created. El Diviso builds on innovation while respecting traditional approaches. Their main goal is to create unique coffees that will stand out on the world's cupping tables.
This particular coffee was processed using the anaerobic washed method. After picking, the ripe cherries are fermented in a closed environment without air access, which helps develop a complex and elegant flavor. Fermentation is followed by washing and drying, which preserves the purity of the cup while promoting the development of a subtly fruity and sweet profile with a smooth body.
