The Las Perlitas Project - big experiences from small harvests "Perlitas" means "little pearls" in Spanish - and that's exactly the role these micro blends from farmers in the Huila region play . Producers like Deiro Gasca, Lizardo Imbachi, Erik Bravo and Delfin Carvajal grow exceptional coffees during the harvest, but in such small quantities that they could not be exported on their own. The Coffee Quest, however, combines them into a harmonious whole, with each lot undergoing rigorous cupping, moisture and water activity measurements before being carefully processed in Medellín. The result is a blend that tastes like a selection of the best of Colombia's mountains at altitudes of 1,600 to 2,000m.
Although it is a washed coffee, its fermentation is designed to bring out the fruitiness and sweetness more commonly associated with natural processing. Fermentation lasts 24 to 72 hours depending on the weather, encouraging the development of sweetness and mild acidity. Drying is then slow, 7 to 14 days, which keeps the profile clean but deep. The varieties used, such as Gesha, Tabi, Caturra and Red Bourbon, complement each other beautifully in the cup - floral lightness, full body and juicy fruit. And because it's an omni roast, you can enjoy it just the way you like your coffee.
