The La Cabaña farm, located in the hilly area of Bruselas in the Huila region, reflects family collaboration and the meticulous work of several generations. The Ortiz family has been cultivating coffee since 1965 and has owned their current farm since 2009. Today, William, his brother Julián, their parents, and the younger generation work together on the farm. While William focuses on innovative fermentation techniques, his father Libardo remains faithful to traditional methods, ensuring clean, classic flavors. It is precisely this combination of tradition and modern approaches that creates unique lots of exceptional quality.
The washed process of this coffee begins with careful hand-picking of cherries, with pickers achieving up to 80% success in selecting perfectly ripe fruits. After harvest, the cherries are mechanically depulped and fermented for 36 hours in a dry anaerobic environment in concrete tanks. The beans are then rinsed three times, followed by a 15-day drying period that takes place directly on the farm without the use of any additives except pure water. This meticulous process, combining precision and respect for the raw material, contributes to the clean, transparent, and highly elegant taste of the final coffee.
