This unique coffee, created in collaboration with Finca El Diviso and Cata Export, celebrates everything we love about specialty coffee – rich flavors, innovative processing methods, and honest farm work. In the cup, you’ll be greeted by an explosion of sweet fruity notes – reminiscent of a fruity birthday cake, cherry jam, and a smooth caramel finish. Natural fermentation adds depth and a velvety smooth body, turning every sip into a true experience.
This birthday coffee comes from El Diviso farm in Colombia’s Huila region, where brothers Nestor and Adrian Lasso took over the family farm and gave it a new direction. Instead of traditional coffee farming, they chose to experiment with fermentation and new processing techniques, quickly gaining recognition in the coffee world. Together with Johan Vergara, they formed a farming collective focused on exceptional quality and direct partnerships with roasters. Thanks to their efforts, coffee from El Diviso has appeared in prestigious competitions like the Brewers Cup in Ireland and Austria – and now it’s part of Kofio’s birthday edition.
The processing of this limited edition follows a precise method that ensures a full-bodied flavor and pronounced sweetness. After being hand-picked, the cherries undergo a 24-hour oxidation period, are then depulped, and continue through another 20-hour oxidation to enhance the development of fruity notes. The coffee is then dried for 15 days in parabolic solar dryers, helping it retain its rich taste and gentle acidity.
