Omar Arango is entrusted with the management of Finca San Luis, located in the town of Libano in the province of Tolima. He is dedicated to refining the processes and production of high-quality coffee, focusing on more efficient harvesting and sorting methods, as well as the benefits of most processes, which has led him to achieve resource optimization and earn an organic production certificate for the year 2015. San Luis has exceptional conditions due to its location near the Ecuadorian border and its altitude, ranging from 1600 to 1900 meters above sea level. The coffee plants are capable of producing quality coffee throughout the year, with flowers, green, yellow, and red beans all appearing on the same tree. Coffee cultivation is complemented by a system of regulated shading from trees, creating an environment for many bird species and other wildlife, thus supporting the protection of both local and national fauna.
This coffee was processed using the anaerobic washed method, an innovative process that combines elements of the traditional washed method with anaerobic fermentation. The coffee cherries are first depulped and then placed in sealed containers without exposure to oxygen, where fermentation occurs. This process lasts several hours to days, during which unique flavors and aromas develop. After fermentation, the beans are thoroughly washed with water and dried. The result is a coffee with a distinct, clean flavor profile and often higher fruity acidity.
